Cauliflower Fried Rice
This is one of my go-to recipes when I need a healthy lunch or dinner without a big time commitment. I always keep a few staples on hand- frozen cauliflower rice and frozen mixed veggies to be able to whip this up on any day! Since its is “veggies most”, this falls perfectly into the 2bmindset nutrition plan that I follow.
Ingredients-
-1 bag frozen cauliflower rice plain (there are now stir fry options that have the veggies already mixed in)
-1/2 bag frozen mixed veggies (8 oz.)
-2 eggs
-1/2 tsp minced garlic
-1 tbsp olive oil or coconut oil
-1/2 tsp sesame oil
-1 tsp Liquid aminos or low sodium soy sauce
Recipe-
-Thaw 8 oz mixed veggies in microwave for 2-3 minutes
-Heat 1 tbsp oil in medium size skillet.
-Add mixed veggies, garlic, and sesame oil. Saute while cauliflower rice is in microwave.
-Thaw cauliflower rice in microwave for 3-4 minutes
-Add cauliflower rice to pan and stir together. Create a well in the center of the pan to add the eggs.
-Whisk 2 eggs in a bowl and then pour into the well in the pan.
-Gently scramble the eggs and then stir everything together.
-Top with green onions (optional)
You can add any additional protein- shrimp, chicken, or tofu to make it a filling dinner for the whole family!
