Unicorn Bark; a Healthy Sweet Treat

Here’s a fun recipe to try for a healthy sweet treat!

🦄 🦄 Unicorn Bark! 🦄 🦄

What you’ll need:

  • 2 1/4 cups vanilla yogurt*

  • 3 scoops Vanilla protein powder (you can skip this if you don’t have it)

  • 1/2 cup blueberries (fresh or frozen)

  • 1/2 cup strawberries (fresh or frozen)

  • 1/2 cup mango (fresh or frozen)

  • Fun sprinkles or unsweetened coconut for topping

*You can also sub vanilla yogurt for plain Greek yogurt and add honey/agave to sweeten it.

Instructions.

  • Blend 3/4 cup yogurt, protein powder, and strawberries in a blender. Blend & set aside.

  • Repeat with the other fruit and place in their own bowls.

  • Line a fully-edged baking sheet or glass pan with parchment paper.

  • Scoop large dollops of the strawberry mix on the paper in a random pattern. Repeat with blueberry and mango mixtures.

  • Gently pull through with a knife, toothpick, or skewer to create marbling effect

  • Top with sprinkles or coconut.

  • Cover with plastic wrap and freeze for 2-3 hrs or until firm.

  • Remove from freezer and break apart. Enjoy some immediately, and return the rest to the freezer to store.
