Pumpkin oatmeal muffins

Hello Fall! 🎃

What better way to kick off October than with healthy and delicious pumpkin oatmeal cups?! These are perfect to make ahead for the week and enjoy with a pumpkin spice latte in the morning.

These can be gluten and dairy free if you make sure you have gluten free oats and use almond milk.

Pumpkin oatmeal muffins

Makes 12 muffin cups

Ingredients:

  • 1 cup canned pumpkin puree

  • 1 1/3 cups milk or non dairy alternative milk

  • 2 large eggs

  • 1/3 cup pure maple syrup

  • 3 cups old fashioned oats

  • 1 tsp. baking powder

  • 1 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • optional- 1 cup dark chocolate chips or nuts


Instructions:

  1. Preheat oven to 350’

  2. Place cupcake liners in a muffin tray and spray with non stick spray

  3. Whisk all ingredients together except for the chocolate chips.

  4. Use a spatula to fold in chocolate chips or nuts. Spoon into muffin liners.

  5. Bake for 25-27 minutes or until the center is cooked through and a knife comes out clean.
