Jackfruit Tacos

I tried this recipe earlier this year and I have been meaning to share it with you! One of my new years resolutions was to try to incorporate a few new recipes for our dinner table each month and so far it’s been fun finding new family favorites! (And of course, it’s not all sunshine and rainbows over here - there are some that didn’t go over as well, either.)

Most recently, we tried Jackfruit Tacos! Jack fruit is low in calories, has natural, healthy fats and is a great source of fiber, vitamins A & C, antioxidants and potassium! Jackfruit is a huge fruit, so I didn’t actually buy the whole thing. (Grocery shoppers, beware! Don’t confuse it with a durian; you’ll be in for QUITE the taste/smell difference.

I ended up finding a a pre-seasoned taco Jackfruit in the produce section that just needed to be sautéed for a few minutes. Add some veggies and guacamole and dinner is served!

The verdict? It’s really good, and I couldn’t even tell that it wasn’t meat. I’m calling it a winner. ✔️
