Roasted Cabbage Wedges with Feta Dressing

Let me guess you’re probably here because you either love feta like I do, or you’re wondering “What the heck are cabbage wedges?” This meal is EASY and low carb. You can eat these on their own, or as a side with your favorite roasted or grilled chicken, pork chops or steaks!

Roasted Cabbage Wedges with Feta Dressing

  • Preheat your oven to 400 degrees.

  • Cut cabbage into wedges and place on a sheet pan.

  • Season them by drizzling olive oil and sprinkling salt, pepper and paprika.

  • Roast 35-40 min or until outside is crisp!

While those are roasting, it’s time to mix up the sauce! Here’s what you’ll need:

  • 3/4 c. Greek yogurt

  • 1/2 c. crumbled feta

  • Splash of milk

  • 2 tsp. reduced sodium soy sauce or liquid aminos

  • 1 1/2 tsp. parsley

  • Salt and pepper to taste!

Mix all of those together and drizzle over the roasted wedges.

Looking for an extra element? Crisp up some bacon by starting it after you pop the wedges in the oven, and sprinkle it on top.
